Prepare Ingredients
Begin by preparing all the ingredients for cooking. Rinse the Carolina Gold Rice under cold water until the water runs clear. Cut the pork belly, maguro chiai, and offal into bite-sized pieces. Chop the onion, mince the garlic, and grate the ginger. Slice the green onions thinly for garnish.

Cook the Meats
Add the pork belly and cook until it starts to brown, about 5 minutes. Then, add the maguro chiai and pork offal, stirring well to combine. Cook for an additional 5 minutes until the meats are browned.

Add Spices and Rice
Stir in the soy sauce, black pepper, star anise, and cinnamon stick. Add the rinsed Carolina Gold Rice to the pot, stirring to coat the rice in the mixture.

Add Chicken Broth
Pour in the chicken broth and bring the mixture to a gentle boil. Season with salt to taste.

Simmer
Reduce the heat to low, cover the claypot with a lid, and allow to simmer for about 25-30 minutes or until the rice is cooked and has absorbed all the liquid.

Garnish and Serve
Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork, garnish with sliced green onions, and serve hot.
