    Prepare the Potatoes

    Wash the heirloom potatoes thoroughly under cold running water to remove any dirt. If they are large, you can cut them into halves or quarters for even cooking.

    Boil the Water

    In a large pot, add 2 liters of water and 2 teaspoons of salt. Bring the water to a rolling boil over high heat.

    Cook the Potatoes

    Once the water is boiling, carefully add the prepared heirloom potatoes. Reduce the heat to medium and let them simmer for about 15-20 minutes, or until they are fork-tender.

    Drain the Potatoes

    Once cooked, drain the potatoes in a colander and let them sit for a few minutes to allow excess steam to escape.

    Prepare the Butter Mixture

    In a small saucepan, melt 100g of cultured butter over low heat. Stir in 1 tablespoon of roasted yeast and mix until well combined.

    Combine and Serve

    In a serving bowl, toss the boiled potatoes with the butter mixture, fresh dill, and black pepper to taste. Serve warm as a delightful side dish.
