Dumpling Dough Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing with your hands or a wooden spoon until a dough forms.

Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic and cook for another minute.

Cook the Beef
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Season with salt and pepper.

Combine Ingredients
Once the beef is cooked, remove from heat and let it cool slightly. Stir in the grated Parmigiano-Reggiano cheese and chopped parsley. Mix well and set aside.

Roll out the Dough
After the dough has rested, divide it into two portions. Roll out one portion on a floured surface to about 1/8 inch thickness. Use a round cutter to cut circles, about 3 inches in diameter.

Fill the Dumplings
Place a teaspoon of the beef filling in the center of each dough circle. Moisten the edges with water, fold over to create a half-moon shape, and press to seal tightly.

Boil the Dumplings
Bring a large pot of salted water to a boil. Carefully add the dumplings in batches, making sure not to overcrowd the pot. Boil for about 5-7 minutes or until they float to the surface.

Remove the dumplings with a slotted spoon and serve hot with your choice of dipping sauce.
