Caviar Service Components

Method

Preparation

  1. 1

    Prepare Egg Confit

In a small saucepan, combine the eggs and olive oil. Cook over low heat for about 45 minutes, until the eggs are soft but fully cooked. Remove from heat and let cool slightly. Carefully crack the eggs and scoop the yolks into a bowl, discarding the whites.

  2. 2

    Toast Japanese Milk Bread

Lightly toast the Japanese milk bread slices until golden brown. This can be done in a toaster or on a skillet over medium heat.

  3. 3

    Prepare Caviar Service

On a serving platter, arrange the toasted milk bread slices. Top each slice with a spoonful of crème fraîche and a dollop of egg confit. Add a generous amount of Kristal caviar on top of each. Sprinkle with chopped chives, sea salt, and black pepper to taste.
