Method

Preparation of Panisse

    Boil Liquids

    In a saucepan, bring the water and coconut milk to a boil.

    Mix Dry Ingredients

    In a separate bowl, whisk together chickpea flour, vindaloo spice blend, and salt.

    Combine Mixtures

    Gradually add the dry mixture to the boiling liquid, stirring constantly to prevent lumps.

    Thicken Mixture

    Continue to cook and stir for about 5-7 minutes until the mixture thickens and pulls away from the sides of the pan.

    Add Filling

    Remove from heat and stir in the mashed fava beans, cilantro, and lime juice.

    Set Mixture

    Spread the mixture into a greased baking dish and let it cool for at least 1 hour until set.

Frying

    Cut Panisse

    Once set, cut the panisse into desired shapes (sticks or squares).

    Heat Oil

    In a deep skillet, heat vegetable oil over medium-high heat.

    Fry Panisse

    Fry the panisse pieces in batches until golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove from oil and drain on paper towels. Serve warm.
