Bruschetta Topping

Method

Preparation

  1. 1

    Prepare the Tomato Mixture

In a bowl, combine chopped Roma tomatoes, minced garlic, finely chopped red onion, chopped basil leaves, salt, and black pepper. Drizzle with olive oil and toss gently to combine. Let the mixture sit for at least 15 minutes to allow the flavors to meld.

  2. 2

    Make the Balsamic Reduction

In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce the heat to low and simmer for about 10-15 minutes, or until it thickens and reduces by half. Remove from heat and let it cool.

  3. 3

    Toast the Crostini

Preheat your oven to 400°F (200°C). Slice a baguette into 1/2-inch thick slices and arrange them on a baking sheet. Brush each slice with olive oil and toast in the oven for about 5-7 minutes, or until golden brown.

  4. 4

    Assemble the Bruschetta

Top each toasted crostini with a generous spoonful of the tomato mixture. Sprinkle with grated Parmesan cheese and drizzle with the balsamic reduction just before serving.
