Mixed Green Salad

Prep greens and vegetables
Rinse the mixed salad greens under cold water and spin or pat dry thoroughly. Halve the cherry tomatoes, thinly slice the cucumber, and very thinly slice the red onion. Place all prepared vegetables into a large mixing bowl.

Make the dressing
In a small bowl or jar, combine 3 tbs extra virgin olive oil, 1.5 tbs fresh lemon juice, 1 tsp Dijon mustard and 1 tsp honey. Whisk or shake until emulsified. Season with salt and freshly ground black pepper to taste.

Toss and finish
Pour the dressing over the greens and vegetables and toss gently to coat evenly. Sprinkle 0.5 cup crumbled feta over the top just before serving to retain texture.
Fresh Fruit Bowl

Prepare fruit
Wash all fruit. Hull and quarter strawberries, slice kiwi, segment or peel and section oranges, and keep blueberries whole. Combine in a large bowl so the total volume is about 4 cups.

Dress and chill
In a small bowl, whisk 1 tbs fresh lime juice with 1 tbs honey (or maple syrup) until combined. Pour dressing over the fruit and gently toss to coat. Stir in 2 tbs chopped fresh mint and 0.25 cup pomegranate seeds if using. Chill for at least 10 minutes to let flavors meld.
Yogurt, Granola & Parfait Components

Sweeten the yogurt
In a medium bowl, stir 2 tbs honey into 3 cups plain Greek yogurt until smooth and evenly sweetened. Taste and adjust sweetness as desired.

Assemble parfaits
For each serving glass or jar, add a 1/3 cup layer of sweetened yogurt, then a 1/4–1/3 cup layer of granola, followed by a spoonful of mixed berries. Repeat to create two layers or until jar is filled, finishing with a sprinkle of chia seeds and 2 tbs toasted chopped nuts on top. Serve immediately so granola stays crunchy.

Keep components separate if serving buffet-style
If offering as a selection for guests, place sweetened yogurt, granola, berries, chia seeds and nuts in separate bowls with spoons so guests can build their own parfaits (keeps granola from getting soggy).
Overnight Oats

Combine base ingredients
In a mixing bowl, whisk together 2 cups rolled oats, 2 cups milk, 1 cup plain Greek yogurt, 2 tbs chia seeds, 2 tbs maple syrup (or honey), 1 tsp vanilla extract and 0.25 tsp fine sea salt until evenly combined.

Portion and chill
Divide the oat mixture evenly into four 8-12 oz jars or airtight containers. Seal and refrigerate for at least 8 hours (overnight) — allow approximately 480 minutes for full soaking and thickening.

Top and serve
Before serving, stir each jar and add toppings: 1/4 cup sliced banana, 1/4 cup fresh berries and 2 tbs chopped nuts or a sprinkle of granola per serving. Serve cold.
