Sweet Potato Fries

    Preheat oven

    Preheat the oven to 220°C (425°F). Line two large baking sheets with parchment paper or lightly oil them so fries won't stick.

    Cut and soak

    Wash and peel the sweet potatoes (peeling optional). Cut each into 1/2-inch thick sticks for even cooking. Place cut fries in a large bowl of cold water and soak for 20 minutes to remove excess starch — this helps them crisp.

    Dry thoroughly

    Drain the fries and spread them on clean kitchen towels or paper towels. Pat completely dry — any surface moisture will create steam and prevent crisping.

    Season

    Return the dry fries to a large bowl. Add 3 tbs olive oil, 2 tbs chopped rosemary, 1 tsp garlic powder, 1 tsp smoked paprika, 1.5 tsp salt, and 0.5 tsp black pepper. Toss thoroughly to coat each fry evenly.

    Arrange and roast

    Arrange the fries in a single layer on the prepared baking sheets with a little space between pieces (crowding causes steaming). Roast on the middle rack for 18–20 minutes, then use a spatula to flip the fries and rotate the pans. Continue roasting 10–15 minutes more until edges are browned and fries are crisped to your liking (total roast ~28–35 minutes depending on thickness).

    Finish with Parmesan & lemon

    When fries are just out of the oven and still hot, transfer to a serving platter or bowl. Immediately sprinkle 0.75 cups shaved Parmesan over the fries so it softens slightly and adheres. Grate or zest 1 tsp fresh lemon over the top and scatter a few extra rosemary leaves for aroma. Taste and adjust salt if needed.

Avocado Citrus Aioli

    Prepare ingredients

    Halve and pit the ripe avocado and scoop the flesh into a blender or food processor (or a bowl if using an immersion blender). Mince 1 garlic clove and roughly chop the cilantro if using.

    Blend aioli

    Add to the blender: 0.5 cup Greek yogurt, 2 tbs mayonnaise, 1 tbs lime juice, 1 tbs lemon juice, 1 tbs extra-virgin olive oil, minced garlic, 1 tbs chopped cilantro (optional), 0.5 tsp salt, and 0.25 tsp black pepper. Blend until very smooth. If mixture is too thick for dipping, add cold water 1 tbs at a time (up to the listed 2 tbs) and blend to reach a creamy, dippable consistency.

    Adjust seasoning & chill

    Taste and adjust salt, pepper, or citrus to brighten if needed. Transfer to a small bowl and chill 10–15 minutes if time allows to let flavors meld; the aioli can be served immediately if needed.

    Serve the warm sweet potato fries with the avocado citrus aioli on the side for dipping. Offer extra shaved Parmesan and lemon wedges for guests to add more brightness as desired.
