Sift matcha
Sift 4 tsp ceremonial-grade matcha into a medium bowl or a wide matcha chawan to remove clumps. This ensures a smooth texture.

Add hot water
Pour 120 ml of hot water (85–90°C / 185–195°F) over the sifted matcha. Using water below boiling preserves the green, vegetal flavor.

Whisk to froth
Whisk vigorously in a rapid 'M' or 'W' motion with a bamboo whisk (chasen) for 15–30 seconds until the mixture is smooth and a fine foam forms on the surface. If you don't have a chasen, use a small handheld frother or shake the matcha and water in a tightly sealed jar for 30–45 seconds, then pour.

Prepare milk (hot)
For a hot matcha latte: pour 2 cups whole milk into a small saucepan and heat gently to about 65°C (150°F) — do not boil. Alternatively, steam with an espresso machine steam wand until silky microfoam forms. Reserve.

Prepare milk (iced)
For an iced matcha latte: keep 2 cups milk cold and optionally froth briefly with a handheld frother for a lightly aerated texture. No heating required.

Sweeten the matcha
Stir 2 tbsp simple syrup into the whisked matcha until fully incorporated. Taste and adjust: add up to 1 tbsp more syrup per serving if you prefer sweeter drinks. (If using honey or maple syrup, add while matcha is warm so it dissolves.)

Assemble hot matcha lattes
Divide the sweetened matcha between two pre-warmed cups (about 60 ml matcha concentrate per cup). Pour 1 cup of steamed milk over each, holding back foam with a spoon, then spoon foam on top. Dust each with a light pinch (about 0.25 tsp) of matcha powder for garnish.

Assemble iced matcha lattes
For iced drinks, fill two tall glasses with 3 ice cubes each (adjust to preference). Pour half the sweetened matcha into each glass, then top with 1 cup cold milk per glass. Stir gently to create an even green layer. Dust each with a light pinch (about 0.25 tsp) of matcha powder.

Final adjustments & serving
Taste and adjust sweetness if necessary. Serve immediately. Provide a straw or spoon to stir iced lattes if layers appear separated. Leftover matcha concentrate can be refrigerated up to 24 hours—re-whisk before use.
