Mix rim seasoning
In a small shallow dish, combine 1 tablespoon celery salt, 1/2 tablespoon coarse kosher salt, and 1/4 teaspoon freshly ground black pepper. Stir to blend evenly.

Rim the glass
Run the lemon wedge around the top rim of a 12-16 oz highball glass to moisten. Dip the moistened rim into the salt-pepper mixture and rotate so the rim is evenly coated. Set the glass aside in the refrigerator or fill immediately with ice.

Prepare bacon and shrimp
If not already cooked, pan-fry the thick-cut bacon until crisp, then drain on paper towels. If cooking shrimp from raw, sauté or boil until opaque and fully cooked; cool and pat dry.

Assemble the skewer
Take one bamboo skewer and thread components in this order for a balanced, attractive garnish: fold the cooked bacon strip into a compact ribbon and thread it first, then thread a cooked shrimp, a green olive, a cherry tomato, and finish with the cornichon or small dill pickle. Leave about 2–3 inches of exposed skewer to insert into the glass. Trim celery stalk to 6–8 inches and trim the base so it sits comfortably in the glass alongside the skewer.

Chill garnish
Place the assembled skewer and celery stalk in the refrigerator while you mix the drink so they remain cold and crisp.

Combine cocktail ingredients
In a mixing glass or small pitcher, add 60 ml Tito's vodka, 120 ml house Bloody Mary mix, 15 ml fresh lemon juice, 2 dashes Worcestershire sauce, 2 dashes hot sauce, 1 teaspoon prepared horseradish, 1/4 teaspoon celery salt, and 1/8 teaspoon freshly ground black pepper.

Build the drink
Fill the rimmed highball glass with 1 cup of fresh ice. Pour the combined cocktail mixture over the ice. Stir gently for 10–15 seconds to chill and combine flavors.

Taste and adjust
Taste the drink and adjust seasonings if desired: add another dash of hot sauce for heat, another dash of Worcestershire for umami, or a pinch more celery salt for saltiness. Stir again briefly after adjusting.

Garnish and serve
Place the chilled garnish skewer across the top of the glass or insert it diagonally into the drink, standing the trimmed celery stalk upright beside it. Add the reserved lemon wedge to the rim or float it in the drink. Serve immediately with a straw and a small extra bottle of hot sauce on request.
