Focaccia cheese pizza

    Preheat and prepare

    Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment or lightly oil it.

    Split the focaccia loaf horizontally into two thinner layers, or cut the single loaf into four equal rectangular portions (one per serving). Place the focaccia pieces cut-side up on the prepared baking sheet so toppings sit on top.

    Make a quick garlic-oregano brushing: in a small bowl combine the extra-virgin olive oil, melted unsalted butter, minced garlic clove, dried oregano, 0.25 tsp salt and 0.25 tsp black pepper. Stir to combine.

    Brush a thin layer of tomato pizza sauce evenly over each focaccia portion (about 2 tablespoons per kid; total ~0.5 cup). Leave a small border at the edges for a crust.

    Sprinkle shredded mozzarella evenly over the sauce (about 1/2 cup mozzarella per portion; total 2 cups). Finish with grated Parmesan evenly distributed.

    Lightly brush the exposed focaccia crust/edges with the garlic-oregano butter mixture for flavor and browning.

    Bake

    Place the baking sheet in the preheated oven and bake 10–12 minutes, until the cheese is melted, bubbly, and the focaccia edges are golden and crisp. If you prefer a browner top, switch to the oven broiler for 30–60 seconds while watching closely.

    Remove from oven and let rest 1–2 minutes. Scatter the fresh basil leaves across the pizzas if using. Using a pizza cutter or sharp knife, slice each focaccia portion into kid-friendly pieces and plate.

    While the oven is preheating or when the pizza goes in, arrange the frozen oven fries in a single layer on a separate rimmed baking sheet. Toss fries with 1 tbs olive oil to help crisping (optional).

    Bake the fries on the middle oven rack for 16–20 minutes, turning once halfway, until golden and crisp. If both pizza and fries need the oven at once, position sheets so both have airflow; rotate sheets front-to-back and swap rack positions halfway through cook times.

    Immediately after baking, season the fries with 0.5 tsp salt, plate, and serve with ketchup on the side.

    While the pizza and fries cook, prepare the fruit cup: place the bite-sized mixed fruit into a medium bowl.

    Add 1 tbs fresh lemon juice and 1 tbs honey (optional). Gently toss to coat — this keeps fruit bright and adds a mild sweet flavor suitable for kids.

    Divide the fruit into individual small cups and chill briefly if desired, then serve alongside the pizza.

    Fill each disposable or reusable cup with one ice cube quantity (ice cubes ×4 as listed). Pour the selected fountain soda into each cup to fill (one cup per kid). Serve immediately with the pizza and chosen side.
