    Crack 4 large eggs into a medium bowl. Add 30 ml whole milk. Season with 0.5 tsp salt and 0.25 tsp black pepper.

    Whisk the eggs and milk briskly until mixture is uniform in color and slightly frothy (about 20–30 seconds). Fold in the 1 tbsp finely chopped chives. This aeration will give a slightly fluffier omelette.

    Prepare the cheese

    Shred about 60 g of cheddar (or your preferred cheese) and have it ready on a small plate so you can add it quickly when the omelette is nearly set.

    Heat the pan

    Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 15 g unsalted butter and swirl until melted and foaming but not browned (about 30–45 seconds). Reduce heat slightly if butter starts to brown.

    Cook the eggs gently

    Pour the whisked egg mixture into the pan and let it sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, gently pull the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Repeat this motion every 15–20 seconds until the surface is mostly set but still slightly glossy on top (total cook time ~1.5–2 minutes).

    Add the cheese

    Sprinkle the shredded cheddar evenly over one half of the omelette while the top is still slightly moist so the cheese melts into it (about 20–30 seconds).

    Fold and finish

    Use the spatula to fold the omelette in half over the cheese. Let it cook for another 20–30 seconds to ensure the cheese melts and the center finishes cooking but remains tender. Avoid overcooking — the interior should be soft, not dry.

    Slide the omelette onto a plate. Optionally add a small pat (about 5 g) of butter on top to melt for shine, and sprinkle a few extra chopped chives for color. Serve immediately.
