    Combine coffee and water

    In a clean 1.5–2 quart jar or pitcher, add 1 cup coarsely ground coffee. Pour 4 cups cold filtered water over the grounds, making sure all grounds are saturated. Stir gently for 10–15 seconds to ensure even wetting.

    Steep

    Cover the jar with a lid or plastic wrap. Let steep at room temperature or in the refrigerator for 12 hours (12–14 hours for a fuller extraction).

    Strain the concentrate

    After steeping, strain the cold brew through a fine-mesh sieve lined with a coffee filter, cheesecloth, or a nut-milk bag into a clean container. Press or squeeze gently to extract as much liquid as possible. Discard grounds. You now have cold brew concentrate (~3–3.5 cups).

Herbal Infusion & Syrup

    Bruise the herbs

    Lightly bruise the spearmint, basil, and lemon verbena leaves with the back of a spoon or by gently rubbing between your fingers—this releases their oils without shredding them.

    Make the quick herbal agave syrup

    In a small saucepan combine 0.5 cups water, 2 tbs agave nectar, 1 tbs orange zest, the bruised herbs (mint, basil, lemon verbena) and the dried bay leaf. Bring to a gentle simmer over medium-low heat, then remove from heat and cover. Let steep for 10 minutes off the heat so the herbs and orange zest infuse the syrup without cooking off bright aromatics.

    Strain syrup

    Strain the syrup through a fine sieve into a small bowl or jar, pressing gently on the solids to extract syrup. Discard solids. Taste and add an extra 1/2 tbs agave if you prefer sweeter syrup. Let cool to room temperature (can refrigerate to speed cooling).

    Combine concentrate and syrup

    In the container with your cold brew concentrate, stir in the cooled herbal agave syrup. Start with the full syrup and taste: if the concentrate is very strong, dilute the concentrate with up to 1 cup cold water or milk to taste. The target is a balanced beverage — not overly bitter, with a clear herbal-citrus note.

    Chill

    If the mixture warmed while combining, chill in the refrigerator for 30 minutes or until cold.

    Serve

    Fill 4 tall glasses with ice (about 1/2 cup ice per glass). Pour the cold brew over ice, dividing evenly. Garnish each glass with a fresh mint sprig and a lemon slice. Optional: add an extra splash of cold water or milk per glass if you prefer a lighter cup.

    Storage

    Store remaining cold brew concentrate (combined with syrup) in a sealed container in the refrigerator for up to 5 days. Stir or shake before serving; top with ice and garnish as desired.
