Combine Ingredients

In a medium-sized mixing bowl, combine the mixed olives, rosemary, thyme, sliced garlic, and red chili flakes.

Add Flavorings

Add the lemon zest, lemon juice, olive oil, salt, and black pepper to the bowl. Stir gently to combine all the ingredients.

Marinate

Cover the bowl with plastic wrap and let the olives marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for more intense flavor.

Warm the Olives

To serve, gently warm the marinated olives in a small saucepan over low heat for about 5-10 minutes, stirring occasionally. Do not let them boil.
