    Prepare glass

    Chill a coupe or flute by placing it in the freezer for a few minutes or fill with ice water while you prepare the drink. When ready, discard ice water and set the glass aside chilled.

    Combine base ingredients

    Add the blanco tequila (2 oz), dry sherry (0.5 oz), fresh lime juice (0.75 oz) and house grenadine (0.5 oz) into a cocktail shaker. Fill the shaker with ice to roughly three-quarters full (about 1 cup).

    Shake

    Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted. This both chills and lightly dilutes the mixture and integrates the grenadine.

    Strain

    Double-strain the shaken mixture into the chilled coupe or flute to remove small ice chips (use a Hawthorne and fine mesh strainer if available). Fill the glass about two-thirds full.

    Top with sparkling wine

    Carefully top the strained cocktail with 2 oz (about a generous pour) of chilled brut sparkling wine. Pour slowly down the side of the glass or over the back of a bar spoon to preserve effervescence and avoid excessive foaming.

    Garnish and serve

    Garnish with a lime wheel or a thin lime twist on the rim. Serve immediately while effervescent. Optionally give the guest a small stirrer so they can gently mix the bubbles with the base before sipping.
