Pepper-Basil Syrup

Make the syrup
Combine sugar and water in a small saucepan over medium heat. Stir until sugar is completely dissolved and mixture just comes to a gentle simmer (do not boil hard). Remove from heat.

Add basil leaves and freshly cracked black pepper to the hot syrup. Stir gently to submerge the leaves and release aromatics.

Let the basil steep in the syrup until it cools to room temperature, about 20–30 minutes for strong basil flavor. Taste and adjust: add a pinch more pepper if you want a spicier note.

Strain the syrup through a fine-mesh sieve (or cheesecloth) into a clean container, pressing on the basil to extract flavor. Discard solids. Refrigerate until cold. Syrup will keep refrigerated for up to 2 weeks.

Fill a cocktail shaker with ice (about 3/4 full).

Add Irish whiskey (1.5 oz), sake (0.75 oz), fresh grapefruit juice (1 oz), fresh lemon juice (0.5 oz), and pepper-basil syrup (0.75 oz) to the shaker.

Dry-shake (shake without ice) vigorously for 8–10 seconds to emulsify flavors and lightly aerate the mixture, then add ice and shake hard for 10–12 seconds until the shaker is well chilled. (Optional: If you prefer a slightly lighter texture, only wet-shake for 12–15 seconds.)

Dump ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any herb bits.

Express the oils from a grapefruit twist over the drink by pinching the twist skin-side down across the surface, then optionally rub the twist around the rim and drop it into the glass or perch a thin wheel on the edge. Gently slap the basil leaf between your palms to release aroma and rest it on the drink as garnish.
