Prepare Strawberries

    Choose 24 medium-to-large fresh strawberries that are ripe but firm and have intact green stems. Rinse them gently under cool running water to remove dirt. Do not soak.

    Dry thoroughly: Pat each strawberry completely dry with paper towels or a clean kitchen towel. Any surface moisture will cause chocolate to seize and prevent proper adhesion—drying thoroughly may take 5–10 minutes.

Melt Semisweet Chocolate

    Place a heatproof bowl over a saucepan with 1–2 inches of simmering water (make sure the bowl does not touch the water). Add all 10 oz semisweet chocolate to the bowl. Stir frequently as it begins to soften until smooth and fully melted, about 5–8 minutes. If desired, stir in 1 tsp neutral oil to thin the chocolate for a glossier finish. Remove the bowl from heat and keep the chocolate warm and fluid.

    Microwave method (faster)

    Place chocolate in a microwave-safe bowl. Microwave at 50% power for 20–30 seconds, stir, then continue heating in 15–20 second bursts at 50% power, stirring between bursts until smooth. Stir in 1 tsp oil if using. Be careful not to overheat (chocolate should be smooth and fluid).

    If using unsweetened cocoa powder for deeper flavor, whisk it into the melted chocolate now to incorporate, though this may slightly thicken the chocolate—adjust with a little more oil if needed (up to another 1/2 tsp).

Dip Strawberries

    Prepare your workspace by lining a baking sheet with parchment paper or a silicone mat.

    Hold a strawberry by the stem (or insert a skewer/toothpick through the top if preferred). Dip the strawberry into the melted semisweet chocolate to about three-quarters of the berry, swirling to coat evenly. Lift and allow excess chocolate to drip back into the bowl while gently rotating the berry with your wrist to create an even coating.

    Place the dipped strawberry on the prepared parchment-lined baking sheet. Repeat with remaining strawberries. If the chocolate begins to thicken as you work, briefly rewarm using your chosen method (a few seconds in the microwave) or place the bowl over the warm double boiler for a moment—do not overheat.

Optional: Add White Chocolate Drizzle

    Melt white chocolate: Place 3 oz white chocolate in a small microwave-safe bowl and heat at 50% power in 15-second bursts, stirring between each, until smooth. Stir in 1/2 tsp shortening or neutral oil if needed to thin.

    Drizzle: Transfer white chocolate to a small piping bag, a zip-top bag with a tiny corner snipped, or use a fork. Hold over the dipped strawberries and drizzle in quick back-and-forth motions to create thin lines. Allow any drizzles to set on the baking sheet.

Set and Store

    Allow the chocolate to set at room temperature for 30–60 minutes until firm. For faster setting, place the tray in the refrigerator for 15–20 minutes, but avoid prolonged chilling (over 1 hour) as strawberries can sweat and become watery when returned to room temperature.
