Make turbinado syrup (if you don't have it ready)

Combine equal parts turbinado sugar and hot water (example: 1/2 cup sugar + 1/2 cup water) in a jar. Stir until sugar dissolves completely. Cool to room temperature before use. Refrigerate leftover syrup for up to 2 weeks.

Chill glass

Place an Old Fashioned glass or rocks glass in the freezer for 5–10 minutes or fill it with ice water to chill while you prepare the cocktail.

Build and shake

In a cocktail shaker, add the aged gin (2 oz), Aperol (3/4 oz), Punt e Mes (1/2 oz), fresh lemon juice (3/4 oz), turbinado syrup (1/2 oz), and one dash of bitters if using. Fill the shaker with ice (about 1 cup).

Shake vigorously

Secure the shaker and shake hard for 12–15 seconds, until the outside of the shaker is very cold and the ingredients are well integrated and slightly diluted.

Prepare serving glass

Empty the chilled glass of any ice water and place a single large ice cube or clear ice block into the glass.

Strain

Double-strain the shaken cocktail over the large ice cube using a Hawthorne and fine strainer (or one fine strainer) to remove small ice shards and citrus pulp, yielding a smooth, bright pour.

Garnish and finish

Express a lemon twist over the cocktail by holding the twist skin-side down above the drink and giving it a short, sharp twist to release oils. Rub the rim with the twist and drop it into the glass. Optionally add one more dash of bitters on top for aromatic complexity.

Serve

Serve immediately. The cocktail should present a warm vermilion-orange hue, balanced bittersweet notes from Aperol and Punt e Mes, citrus brightness from lemon, and a rounded mouthfeel from the aged gin and turbinado.
