Chill glass
Place a rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail so the glass is well chilled.
Measure and combine
In a mixing glass or cocktail shaker filled halfway with ice, pour 3 oz aged red wine, 0.5 oz brandy, 0.5 oz sweet vermouth, 0.25 oz simple syrup, and 2 dashes of orange bitters.
Stir to dilute
Stir the mixture gently for 20–30 seconds (about 15–20 full strokes with a bar spoon) to chill and slightly dilute the drink. Because the base is wine-forward, avoid over-diluting — you want it cold and harmonized.
Prepare glass and garnish
Discard the ice or water from the chilled rocks glass. Add one large clear ice cube or sphere to the glass.
Strain and serve
Strain the stirred mixture into the prepared rocks glass over the large ice cube.
Express and finish
Take an orange peel and hold it with the outside facing down over the drink. Give it a firm twist to express oils over the surface, then rub the peel around the glass rim and drop it into the drink as garnish.
Serve
Serve immediately while chilled. Sip slowly to enjoy the layered flavors of wine, fortified wine and brandy.
