Combine and chill
Add 2 oz bourbon, 0.5 oz dark aged rum, 0.5 oz ginger liqueur, 0.75 oz fresh lemon juice, 0.5 oz maple syrup, and 3 dashes Angostura bitters into a mixing glass or shaker filled with ice.
Shake
Vigorously shake for 12–18 seconds until the outside of the shaker is well chilled and slightly frosted. The agitation integrates the maple and ginger while aerating slightly to produce a silky texture.
Strain over large ice
Double-strain the cocktail into a chilled rocks glass prepared with one large ice sphere or big cube to minimize dilution.
Smoked Fog (optional but recommended)
Prepare smoking setup
If you have a handheld smoker or smoking gun: place a small handful (about 1/4 cup) of applewood or cherry wood chips into the smoker chamber. If you don't have a smoker, you can light chips on foil and capture smoke with an inverted heatproof bowl over the glass (exercise caution).
Rinse glass
Lightly rinse the inside of the serving glass with 1/4 oz high-proof neutral spirit (drop in and swirl then discard or leave — optional) to help capture smoke and add a faint boozy brightness.
Introduce smoke
Seat the prepared cocktail glass (with the cocktail already poured over the big ice) under the smoking gun nozzle or place the lit wood chips beneath a small dome covering the glass. Fill the glass with smoke and let it sit sealed for 20–45 seconds to absorb the aroma. For stronger smoke, leave an additional 10–20 seconds. If using the bowl method, invert the bowl over the glass to trap smoke.
Garnish & Finish
Express the orange
Take the large orange peel and hold it over the glass. Give it a firm twist to express the oils onto the surface of the cocktail and over the captured smoke to release citrus aromatics into the fog.
Finish
Optionally grate a tiny pinch of cracked black pepper over the expressed oils for a savory counterpoint. Lay the orange peel on the ice as garnish and serve immediately while the smoke is still perceptible.
