Prepare glass
Chill a double old-fashioned glass or tiki mug in the freezer for a few minutes. Fill the chilled vessel with crushed ice and set aside while you build the drink.
Build and shake
In a cocktail shaker, add 6 ice cubes, 2 oz Towpath Bourbon, 1 oz passion fruit purée (or juice), 0.75 oz fresh lemon juice, 0.5 oz honey syrup, and 3 dashes tiki bitters. Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Strain and assemble
Discard the ice from the chilled glass or leave some crushed ice if desired. Using a fine strainer or Hawthorne, strain the shaken mixture over fresh crushed ice in the glass, filling to just below the rim.
Float overproof rum (optional)
Carefully pour 0.25 oz overproof rum over the back of a bar spoon to float it on top of the drink for aroma and a dramatic Tiki finish.
Add bitters
Add 1–2 extra dashes tiki bitters on top of the foam/ice for aromatic complexity, in addition to the 3 dashes used in the shaker if you prefer a more pronounced bitters note.
