    Cook the Potatoes

    Wash and dice the potatoes into small cubes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the potatoes, salt, and pepper. Cook until they are crispy and golden brown, about 15-20 minutes, stirring occasionally.

    Prepare the Turkey Patties

    In a bowl, mix the ground turkey with salt and pepper. Form into two patties. In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Cook the turkey patties for about 5-7 minutes on each side, or until fully cooked through.

    In the same skillet used for the turkey, crack the eggs and fry them to your liking (sunny-side up or over-easy). Remove from heat.
