Make the Chocolate Cremeaux
In a saucepan, heat the heavy cream until it just begins to simmer. In a separate bowl, whisk together the egg yolks and sugar. Slowly add the hot cream to the egg mixture while whisking continuously. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened. Remove from heat and stir in the chopped chocolate and vanilla extract until smooth. Pour into serving dishes and refrigerate until set, about 2 hours.

Prepare the Graham Crumble
In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Mix until crumbly. Spread the mixture on a baking sheet and bake at 350°F (175°C) for about 8-10 minutes or until golden brown. Allow to cool.

Toast the Marshmallows
Skewer marshmallows on sticks and toast them over an open flame or using a kitchen torch until golden brown and gooey.

Make the Bourbon Caramel
In a saucepan, combine sugar and water over medium heat until the sugar dissolves. Increase heat and bring to a boil without stirring until it turns a deep amber color. Remove from heat and carefully add bourbon (be cautious as it may bubble). Stir until smooth and let cool slightly.

Assemble the S'mores By The Spoonful
In a serving dish, layer the chocolate cremeaux, toasted marshmallows, and graham crumble. Drizzle with bourbon caramel on top. Serve immediately.
