Prepare the Fruit
Wash and slice the peach, green apple, lemon, and strawberries into thin pieces. Make sure to remove the peach pit and apple core.

Mix the Base
In a large pitcher, combine the sliced fruits with the white cognac, brandy, peach liqueur, and white wine. Stir gently to mix the ingredients.
Chilling

Chill the Sangria
Cover the pitcher with plastic wrap or a lid and place it in the refrigerator. Allow it to chill for at least 2 hours to let the flavors meld.
Serving

Add Fizz
Once chilled, gently stir in the sparkling water and simple syrup to the pitcher. Adjust the sweetness with more simple syrup if desired.

Garnish and Serve
Pour the sangria into glasses filled with ice, and garnish each glass with fresh mint leaves. Serve immediately.
