Method

Whipped Feta

    Prepare Whipped Feta

    In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, minced garlic, salt, and black pepper.

    Blend

    Process the mixture until smooth and creamy. Adjust the seasoning to taste.

Pickled Onion

    Slice Onion

    Thinly slice the red onion and place it in a clean jar.

    Prepare Pickling Liquid

    In a small saucepan, combine apple cider vinegar, sugar, and salt. Bring to a boil, stirring to dissolve the sugar.

    Pickle Onions

    Pour the hot pickling liquid over the onions in the jar. Let it cool to room temperature, then refrigerate for at least 30 minutes.

Chili Pistachios

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Prepare Pistachios

    In a mixing bowl, combine pistachios, olive oil, chili powder, and salt. Toss until evenly coated.

    Bake

    Spread the pistachios on a baking sheet and bake for 10-12 minutes, or until lightly toasted. Let cool.

Pomegranate Molasses

    Cook Pomegranate Juice

    In a saucepan, combine pomegranate juice and sugar. Bring to a boil and then reduce to a simmer.

    Cook for about 30-40 minutes, stirring occasionally, until the mixture thickens to a syrupy consistency. Let it cool.

Herbed Focaccia

    Activate Yeast

    In a bowl, combine warm water and yeast. Let it sit for 5-10 minutes until frothy.

    Make Dough

    In a large bowl, mix flour and salt. Add the yeast mixture and 2 tablespoons of olive oil. Mix until combined.

    Knead

    Knead the dough for about 5 minutes until smooth. Place it in an oiled bowl, cover, and let it rise for 1 hour.

    Shape Focaccia

    Preheat oven to 425°F (220°C). After rising, spread the dough onto a greased baking sheet. Dimple the surface with your fingers.

    Add Herbs

    Drizzle with remaining olive oil and sprinkle with fresh rosemary and thyme. Let it rise for another 20 minutes.

    Bake for 20-25 minutes or until golden brown. Let cool slightly before slicing.
