Pasta Preparation

    Cook the Rigatoni

    In a large pot, bring salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.

Sauce Preparation

    Make the Sauce

    In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and crushed red pepper flakes. Sauté for about 1 minute until fragrant.

    Add Tomato Puree and Vodka

    Pour in the tomato puree and vodka. Stir well to combine and let it simmer for about 10 minutes.

    Incorporate Cream and Season

    Lower the heat and add the heavy cream, grated pecorino cheese, salt, and black pepper. Stir until the cheese has melted and the sauce is creamy, about 5 minutes.

Shrimp and Greens Addition

    Cook the Shrimp

    In another pan, heat a little olive oil over medium-high heat. Add the red shrimp and cook for 3-4 minutes until they turn pink and opaque.

    Add Spinach and Basil

    Add the chopped spinach and basil to the shrimp and sauté for an additional 2-3 minutes until the spinach wilts.

Combine and Serve

    Mix Pasta with Sauce

    Add the drained rigatoni pasta to the sauce and toss to coat evenly.

    Add Shrimp and Greens

    Gently fold the shrimp and spinach mixture into the pasta and sauce. Mix well to combine.

    Serve hot, garnished with additional grated pecorino cheese and fresh basil if desired.
