Cooking the Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Making the Cheese Sauce

Prepare the Roux
In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until golden, stirring constantly.

Add Milk
Gradually whisk in the whole milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and bubbles.

Incorporate the Cheeses
Reduce heat to low and add the sharp cheddar and Gruyère cheeses, stirring until melted and smooth. Mix in the truffle oil, and season with black pepper and salt to taste.
Combining Ingredients

Mix Pasta and Sauce
Fold the cooked elbow macaroni into the cheese sauce until well combined. Set aside.
Preparing Focaccia Topping

Make Bread Crumb Topping
In a bowl, combine the torn focaccia bread pieces, olive oil, chopped parsley, and grated Parmesan cheese. Toss until the bread is evenly coated.
Baking the Dish

Assemble and Bake
Preheat the oven to 350°F (175°C). Pour the mac and cheese mixture into a baking dish and evenly sprinkle the focaccia bread crumb topping over the top. Bake for 25-30 minutes or until golden and bubbly.
