Prepare the Ingredients
Start by thinly slicing the shallot, cleaning and slicing the mushrooms, and cutting the piquillo peppers into strips. Set aside.

Cook the Sirloin
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the shaved sirloin and season with salt and black pepper. Cook for 3-4 minutes until browned and cooked through. Remove from the skillet and set aside.
Cooking the Omelet

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced shallots and sauté for 2-3 minutes until translucent. Add the mushrooms and continue to cook for 4-5 minutes until they are browned and tender. Finally, add the piquillo pepper strips and cook for an additional 2 minutes. Remove the vegetables from the skillet and set aside.

Add Fillings
Once the eggs are set on the edges but still slightly runny in the middle, add the sautéed vegetables and cooked sirloin onto one half of the omelet. Sprinkle the gruyere cheese on top.

Finish Cooking
Carefully fold the other half of the omelet over the fillings. Cook for another 2 minutes, or until the cheese is melted and the eggs are fully cooked to your desired doneness.
Serving

Plate the Omelet
Gently slide the omelet onto a plate. Cut it in half if desired and serve hot. Enjoy your steak omelet!
