Method

Prepare the Grits

    Cook Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until the grits are thick and creamy.

    Add Cheese and Season

    Once the grits are cooked, remove from heat and stir in 1 cup of shredded smoked Gouda cheese, 1 tsp black pepper, and mix well until the cheese is melted and evenly incorporated.

Cook the Bacon

    Fry Bacon

    In a skillet over medium heat, add 6 slices of bacon. Cook until crispy, about 5-7 minutes, flipping halfway through. Remove bacon and place on a paper towel to drain excess grease.

Prepare Maple Drizzle

    Maple Drizzle

    In a small bowl, measure out 1 tablespoon of maple syrup. Set aside for drizzling later.

Assemble the Dish

    Plate the Grits

    Spoon the smoked Gouda grits into bowls.

    Add Bacon and Garnish

    Crumble the crispy bacon on top of the grits and sprinkle with 2 tablespoons of chopped scallions.

    Drizzle with Maple Syrup

    Finally, drizzle the prepared maple syrup over the top of the dish for added sweetness.
