Method

Soup Directions

  1. 1

    Prepare the Tomatoes

Preheat your oven to 400°F (200°C). Cut the yellow tomatoes in half and place them cut-side up on a baking sheet.

  2. 2

    Add Aromatics

Chop the onion and place it on the baking sheet with the tomatoes. Add the whole garlic cloves. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt, black pepper, and red pepper flakes.

  3. 3

    Roast the Vegetables

Roast the tomatoes, onion, and garlic in the preheated oven for about 25-30 minutes, or until the tomatoes are soft and slightly caramelized.

  4. 4

    Blend the Soup

Transfer the roasted vegetables to a blender, add the vegetable broth and fresh basil, then blend until smooth.

  5. 5

    Adjust Seasoning

Taste the soup and adjust seasoning with salt and pepper if needed. Keep warm until ready to serve.

Spicy Feta Crema Directions

  1. 6

    Mix the Ingredients

In a food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, fresh dill, red pepper flakes, and salt. Blend until smooth and creamy.

  2. 7

    Taste and Adjust

Taste the crema and adjust the salt or add more lemon juice if desired. Set aside.

Crispy Chive Directions

  1. 8

    Prepare the Chives

Chop the chives into small pieces. In a small bowl, toss the chives with 1 tablespoon of olive oil and a pinch of salt.

  2. 9

    Crisp the Chives

In a small pan over medium heat, sauté the chives for about 2-3 minutes until they are crispy. Remove from heat and set aside.
