Tomato Confit Preparation

  1. 1

    Prepare the Tomatoes

Preheat your oven to 250°F (120°C). Cut the heirloom tomatoes into quarters and place them in a baking dish.

  2. 2

    Add Seasoning

Drizzle the tomatoes with olive oil, add minced garlic, fresh thyme, salt, and black pepper. Toss to coat evenly.

  3. 3

    Slow Roast

Cover the baking dish with foil and roast in the preheated oven for about 2 hours, or until the tomatoes are tender and fragrant. Remove from the oven and let cool.

Caesar Dressing Preparation

  1. 4

    Mix the Ingredients

In a mixing bowl, combine mayonnaise, lemon juice, Worcestershire sauce, minced garlic, chopped capers, and grated Parmesan cheese.

  2. 5

    Season the Dressing

Add salt and black pepper to the mixture. Whisk together until smooth and well combined.

Salad Assembly

  1. 6

    Combine the Ingredients

In a large salad bowl, add the chopped romaine lettuce, prepared tomato confit, and croutons.

  2. 7

    Dress the Salad

Drizzle the Caesar dressing over the salad and toss gently to combine.

  3. 8

    Finish with Cheese

Top the salad with shaved Pecorino Romano cheese before serving.
