Method

Popcorn Chicken

1

Prepare the Chicken

Cut the chicken breast into bite-sized pieces and place them in a bowl.

2

Brine the Chicken

Pour the buttermilk over the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

3

Coat the Chicken

In a separate bowl, mix the flour, cornstarch, salt, pepper, paprika, and garlic powder. Remove the chicken from the brine and coat each piece in the flour mixture, shaking off excess.

4

Fry the Chicken

In a deep pot, heat the vegetable oil to 180°C (350°F). Fry the coated chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

Hot Honey Mustard

5

Mix the Sauce

In a small bowl, combine the honey, Dijon mustard, and hot sauce. Stir well to combine and set aside.

Lettuce

6

Prepare the Lettuce

Wash the romaine lettuce thoroughly and chop it into bite-sized pieces. Set aside for serving.

Garlic Aioli

7

Make the Aioli

In a bowl, mix the mayonnaise, minced garlic cloves, and lemon juice until smooth. Set aside for serving.

Truffle Fries

8

Prepare and Cook the Fries

Cut the potatoes into thin fries. Heat oil in a pot and fry the potatoes until golden and crispy, about 5-8 minutes. Drain on paper towels.

9

Season the Fries

In a bowl, toss the hot fries with truffle oil, grated Parmesan cheese, and salt until evenly coated.
