Pasta Preparation

    Cook the Pasta

    In a large pot, bring water to a boil. Add salt and then the pasta. Cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute). Add the bell peppers, zucchini, and carrot. Cook for 5-7 minutes until vegetables are just tender.

    Add Spinach and Tomatoes

    Stir in the cherry tomatoes and spinach. Cook for an additional 2-3 minutes, until the spinach has wilted and the tomatoes are softened.

Combining Ingredients

    Mix Everything Together

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine. Add the grated Parmesan cheese and black pepper, mixing well until everything is evenly coated.

    Serve

    Serve warm, garnished with additional Parmesan cheese if desired.
