Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the potatoes. Cut them into small cubes (about 1 inch).

  2. 2

    Cook the Bacon

In a large skillet, cook the bacon slices over medium heat until crispy. Remove from skillet and set aside on a paper towel to drain excess fat.

  3. 3

    Fry the Potatoes

In the same skillet with bacon drippings, add olive oil if needed. Add the cubed potatoes, season with salt and black pepper, and fry until golden and crispy, about 10-15 minutes, stirring occasionally.

Cooking the Eggs and Toast

  1. 4

    Cook the Eggs

In a separate small non-stick skillet, crack the eggs and cook them to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

  2. 5

    Toast the Bread

While the eggs are cooking, toast the slices of bread in a toaster or on a skillet until golden brown.

Serving

  1. 6

    Plate the Dish

On a plate, serve the crispy potatoes, bacon, and eggs together, alongside the toast. Enjoy hot.
