Preparation of Ginger Base

Prepare the Ginger
Peel and finely chop the fresh ginger. You should have about 1 cup of chopped ginger.

In a medium saucepan, combine the chopped ginger and 4 cups of water. Bring to a boil over medium heat, then reduce the heat and let simmer for about 30 minutes. This will create a ginger infusion.

After simmering, strain the ginger infusion through a fine mesh sieve into a large bowl or pitcher to remove the ginger pieces.

In a small bowl, dissolve 1 teaspoon of yeast in a few tablespoons of warm water (not hot). Let it sit for about 5 minutes until it becomes frothy.

Add the activated yeast mixture to the ginger infusion. Stir to combine, then cover the bowl or pitcher with a clean cloth and let it sit at room temperature for 24-48 hours to ferment. Check every 12 hours and stir gently.
