Filet Mignon Preparation

Season the Steak
Take the filet mignon steaks and season them generously with salt and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the filet mignon steaks to the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Add the fresh rosemary and butter to the skillet during the last minute of cooking.

Rest the Steak
Remove the steaks from the skillet and let them rest for about 5 minutes before slicing. This helps retain the juices.

Cook the Potatoes
Bring the pot of water to a boil over high heat. Add the garlic cloves and cook until the potatoes are tender, about 15-20 minutes.

Mash the Potatoes
Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
