Preparing Ingredients

Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Once cooked, remove from heat and place on a paper towel to drain excess grease. Once cool, chop into bite-sized pieces.

Place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cover the saucepan and remove from heat. Let sit for 12-15 minutes, then transfer eggs to an ice bath to cool. Peel and slice the eggs.

Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin pieces.

Rinse the grape tomatoes and cut them in half.

In a small bowl, whisk together the creamy Dijon mustard, olive oil, red wine vinegar, honey, salt, and pepper until well combined.

In a large salad bowl, combine the mixed greens, chopped bacon, sliced hard boiled eggs, sliced avocado, halved grape tomatoes, and shredded cheddar cheese.
