Method

Preparing the Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until it's completely melted. Remove from heat and set aside to cool slightly.

    Whisk Egg Yolks

    In a medium bowl, whisk together the egg yolks, lemon juice, and salt until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually drizzle the melted butter into the egg yolk mixture while whisking continuously until the sauce thickens and becomes creamy. If the sauce is too thick, you can add a bit of warm water to reach your desired consistency. Stir in cayenne pepper.

Poaching the Eggs

    Prepare Poaching Water

    Fill a large saucepan with water and bring it to a gentle simmer. Add the white vinegar to the water.

    Crack each egg into a small bowl. Gently slide each egg into the simmering water, one at a time. Poach for about 3-4 minutes or until the whites are set and the yolks are still runny. Remove the eggs with a slotted spoon and drain on a paper towel.
