Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it reaches the right temperature for baking the cakes.

  2. 2

    Grease the Ramekins

Grease four 6-ounce ramekins with butter and dust them lightly with cocoa powder to prevent sticking.

Mixing the Batter

  1. 3

    Melt the Butter

In a microwave-safe bowl, melt the unsalted butter in the microwave until completely melted. Allow it to cool slightly.

  2. 4

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well mixed.

  3. 5

    Mix Wet Ingredients

In the bowl with the melted butter, add the eggs and vanilla extract. Whisk until combined and slightly frothy.

  4. 6

    Combine Mixtures

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.

Baking

  1. 7

    Fill the Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  2. 8

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 9

    Cool Slightly

Remove the ramekins from the oven and allow them to cool for about 1 minute.

Serving

  1. 10

    Plate the Cakes

Carefully invert each ramekin onto a dessert plate. Gently tap the ramekin and lift it off to reveal the lava cake.

  2. 11

    Add Ice Cream

Top each cake with a scoop of vanilla ice cream while they are still warm.

  3. 12

    Dust with Powdered Sugar

Finish by dusting the tops with powdered sugar, if desired, and serve immediately.
