Sandwich Assembly
Method
Prepare Chicken Salad
- 1
Shred the Chicken
Using two forks, shred the cooked chicken breast into bite-sized pieces and place in a mixing bowl.
- 2
Mix Ingredients
Add the mayonnaise, Dijon mustard, diced celery, chopped green onions, chopped parsley, chopped dill, salt, and black pepper to the shredded chicken. Mix well until all the ingredients are thoroughly combined.
- 3
Chill the Mixture
Cover the mixing bowl with plastic wrap and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld together.
Assemble the Sandwich
- 4
Toast the Ciabatta
Preheat your oven to 350°F (175°C). Place the ciabatta pieces on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown.
- 5
Layer the Ingredients
Once toasted, take the ciabatta pieces and layer a handful of lettuce leaves on the bottom half of each piece. Spoon a generous amount of the chilled chicken salad on top of the lettuce, then add slices of tomato.
- 6
Finish the Sandwich
Place the top half of the ciabatta on each sandwich and serve immediately.
