Crust Preparation

Preheat Oven
Preheat the oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.

Bake Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes.

Cool Crust
Remove from the oven and allow to cool slightly while preparing the filling.
Cheesecake Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth.

Add Sugar
Gradually add the granulated sugar, mixing until well combined.

Add Sour Cream and Vanilla
Add the sour cream and vanilla extract, mixing until smooth.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition. Avoid overmixing.

Pour Filling
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake in the oven for about 50-60 minutes, or until the center is set but still slightly jiggly.

Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Remove from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours, or overnight.

In a small bowl, toss the fresh mixed berries with powdered sugar to coat them lightly.
