Preparing Flatbread

Preheat Oven

Preheat your oven to 400°F (200°C).

Prepare Flatbread

Place the flatbreads on a baking sheet and brush them lightly with olive oil. Set aside.

Cooking Toppings

Caramelize Onions

Slice the onions thinly. In a skillet over medium heat, add a tablespoon of olive oil and the sliced onions. Cook for 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Cook Bacon

In the same skillet, add the bacon slices and cook until crispy, about 5-7 minutes. Remove from skillet and let drain on paper towels, then crumble into pieces.

Prepare Avocado and Tomatoes

Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces. Dice the heirloom tomatoes into small chunks.

Assemble Flatbread

Spread the caramelized onions evenly over each flatbread. Top with crumbled bacon, sliced avocado, and diced heirloom tomatoes.

Sprinkle the cheddar cheese blend evenly over the toppings.

Cook Eggs

In a small saucepan, bring water to a boil. Crack the eggs into the boiling water and poach them for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Bake Flatbread

Place the assembled flatbreads in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

Remove the flatbreads from the oven and top each with a poached egg. Season with salt and black pepper to taste. Cut into slices and serve immediately.
