Method
Benedict with Smoked Paprika Hollandaise

Prepare the Hollandaise
In a heatproof bowl, whisk together the egg yolks and lemon juice until light and frothy. Place the bowl over a pot of simmering water (double boiler) and slowly whisk in melted butter until the sauce thickens. Stir in smoked paprika, salt, and white pepper.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the water. Cook for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Toast the Muffins
Split the English muffins and toast them until golden brown. Top each half with a slice of ham or Canadian bacon.

Assemble the Benedict
Place a poached egg on each muffin half and drizzle with the smoked paprika hollandaise. Serve immediately.
Belgian Blueberry Pancakes

In a large bowl, whisk together flour, baking powder, sugar, and salt.

Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in blueberries.

Cook Pancakes
Heat a skillet over medium heat and melt 1 tablespoon of butter. Pour 1/4 cup of batter for each pancake and cook until bubbles form, about 2-3 minutes. Flip and cook for an additional 2-3 minutes until golden.

Nutella French Toast

In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.

Spread Nutella on one side of each slice of bread. Top half of the slices with another slice of bread to make sandwiches.

Dip each sandwich in the egg mixture, coating both sides. Heat a skillet over medium heat and melt 1 tablespoon of butter. Cook sandwiches for 3-4 minutes on each side until golden brown.

In a mixing bowl, combine cream cheese, smoked salmon, dill, lemon juice, and capers. Mix until well combined.

In a skillet over medium heat, cook the bacon slices until crispy, about 4-5 minutes per side. Drain on paper towels.
