Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare Phyllo Dough

    Melt the butter in a small saucepan over low heat. Mix together the sugar and ground cinnamon in a bowl.

    Assemble the Crust

    Brush a 9-inch springform pan with melted butter. Layer 4 sheets of phyllo dough, brushing each layer with melted butter and sprinkling some of the cinnamon-sugar mixture between layers. Repeat with remaining 4 sheets.

Filling Preparation

    Mix the Filling

    In a large bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, crushed pistachios, and pomegranate molasses.

    Pour the Filling

    Pour the cheesecake filling over the prepared phyllo crust, spreading it evenly.

Baking and Topping

    Bake the Cheesecake

    Bake in the preheated oven for 45-50 minutes or until the center is set and the edges are lightly browned. Let cool at room temperature for 1 hour.

    Add Toppings

    Drizzle honey over the baked cheesecake and sprinkle with crushed pistachios and pomegranate seeds.

    Chill and Serve

    Chill the cheesecake in the refrigerator for at least 4 hours before slicing and serving.
