Steak Preparation

    Season the Steak

    Pat the NY strip steak dry with paper towels. Season both sides generously with salt and black pepper. Let it rest at room temperature for about 30 minutes.

    Sear the Steak

    In a cast-iron skillet or heavy pan, heat the olive oil over medium-high heat. When the oil is shimmering, add the steak to the pan. Sear for about 4-5 minutes on one side until a nice crust forms.

    Flip and Cook

    Flip the steak and cook for another 4-5 minutes for medium-rare (adjust time for your desired doneness). Use a meat thermometer to check for an internal temperature of 130°F (54°C).

    Rest the Steak

    Remove the steak from the pan and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

    Prepare the Shallots

    Finely chop the shallots and garlic. Set aside.

    Make the Rosemary Butter

    In a small saucepan over low heat, melt the unsalted butter. Add the chopped shallots and garlic, cooking until they soften, about 2-3 minutes.

    Add Rosemary and Lemon Juice

    Stir in the chopped fresh rosemary and lemon juice. Cook for an additional 1-2 minutes, then remove from heat.

    Pour the rosemary shallot butter over the rested steak just before serving.
