    Marinate the Prawns

    In a bowl, combine the blue prawns, yuzu-kosho, grated ginger, and soy sauce. Mix well and let marinate for 15 minutes.

    Prepare the Sake Reduction

    In a saucepan over medium heat, pour the sake and simmer until reduced by half. Remove from heat and set aside to cool.

    Make the Apple-Shiso Coulis

    In a blender, combine the diced apple, chopped shiso leaves, lemon juice, and a pinch of salt. Blend until smooth and adjust seasoning to taste.

    Cook the Prawns

    Heat a skillet over medium heat. Add the marinated prawns and cook for 2-3 minutes on each side or until they are opaque and cooked through.

    Plating

    On a plate, drizzle the apple-shiso coulis, place the cooked prawns on top, and garnish with mixed caviars if using. Drizzle the sake reduction around the plate and serve immediately.
