Prepare the Ice Creams
In a bowl, mix the vanilla ice cream with coffee extract until well combined. Allow both the vanilla and chocolate ice creams to soften slightly at room temperature for about 10 minutes.

Assemble the Sandwiches
Scoop 1/4 cup of the coffee-infused vanilla ice cream onto the flat side of a chocolate chip cookie. Top with another cookie to create a sandwich. Repeat this process with the chocolate ice cream and remaining cookies.

Freeze the Sandwiches
Place the assembled ice cream sandwiches on a baking sheet lined with parchment paper. Freeze for at least 2 hours or until the ice cream is firm.

Serve with Caramello Sauce
Remove the ice cream sandwiches from the freezer, drizzle with salted caramel sauce, and serve immediately.
