Method

Ravioli Preparation

    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    Soak the dried porcini mushrooms in warm water for 20 minutes, then chop. Combine soaked mushrooms, chestnuts, ricotta, Parmesan, salt, and pepper in a bowl. Mix well.

    Roll out the Dough

    Divide the dough into quarters. Roll out one piece at a time into thin sheets using a pasta machine or rolling pin.

    Fill and Cut Ravioli

    Place small spoonfuls of filling on one sheet of dough, leaving space in between. Moisten the edges with water, cover with another sheet of dough, and seal. Cut into squares.

Caramelized Onion Jus

    Cook the Onions

    Heat olive oil in a pan over medium heat. Add sliced onions and cook until caramelized, about 20 minutes, stirring occasionally.

    Finish the Jus

    Add vegetable broth and balsamic vinegar to the caramelized onions. Simmer for 10 more minutes. Season with salt and pepper to taste.

Leek Etuvee

    Cook the Leeks

    In a separate pan, melt butter over medium heat. Add chopped leeks, vegetable broth, salt, and pepper. Cover and cook until leeks are tender, about 15 minutes.

Roasted Porcini

    Roast the Mushrooms

    Preheat the oven to 400°F (200°C). Toss fresh porcini mushrooms with olive oil, salt, and pepper. Roast in the oven for 15-20 minutes until golden.

Assembly

    Cook Ravioli

    Bring a large pot of salted water to a boil. Cook ravioli for about 4-5 minutes until they float to the surface. Drain.

    Serve

    Plate the ravioli and top with caramelized onion jus, leeks, and roasted porcini mushrooms. Enjoy!
