Preparation

    Prepare the Lemon Confit

    Slice lemons thinly and combine with sugar and water in a saucepan. Simmer on low heat until the lemons are tender and the syrup thickens, about 30 minutes. Let cool.

    Cook the Leeks

    Trim and slice leeks. In a skillet, melt butter and add leeks. Sauté for a few minutes, then add vegetable broth. Cover and braise on low heat for about 20 minutes until tender.

Cooking the Fish

    Broil the Steelhead

    Preheat the broiler. Rub Steelhead fillets with olive oil, salt, and pepper. Place on a baking sheet and broil for about 8-10 minutes until cooked through.

Cooking the Gnocchi

    Prepare the Gnocchi

    In a pot of boiling salted water, cook potato gnocchi until they float to the surface. Drain and toss with butter and fines herbes.

Making the Sauce

    Prepare the Saffron Beurre Blanc

    In a saucepan, combine white wine and saffron. Reduce by half. Add heavy cream and reduce again. Whisk in butter until smooth and emulsified.
