    Prepare the Beef Tenderloin

    Preheat the oven to 200°C (400°F). Season the beef tenderloin generously with salt and black pepper. Heat a large skillet over medium-high heat and add olive oil. Sear the beef on all sides until browned, about 3-4 minutes per side.

    Butter Baste the Beef

    In a separate saucepan, melt the unsalted butter with chopped garlic and diced tomatoes over medium heat. Once the butter is melted and combined with the tomatoes, baste the beef tenderloin with this mixture for about 5 minutes.

    Roast the Beef

    Transfer the skillet with the beef into the preheated oven and roast for 15-20 minutes, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature (medium-rare is 57°C or 135°F).

    Prepare Crispy Potatoes

    While the beef is roasting, peel and slice the potatoes into thin rounds. Toss them in olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for 25-30 minutes until golden and crispy.

    Make the Gratin of Summer Squash

    Slice the summer squash into thin rounds. In a small baking dish, layer the squash, season with salt, pepper, and fresh thyme. Bake in the oven for 15-20 minutes, until tender.

    Prepare Provencal Jus

    In a saucepan, add the beef stock and simmer on low heat. Reduce until slightly thickened, about 10-15 minutes. Adjust seasoning with salt and pepper.

    Plate the Dish

    Slice the beef tenderloin and arrange it on a plate. Serve with the gratin of summer squash, crispy potatoes, a dollop of cured tomato jam, and drizzle with Provencal jus.
